Edibles Log

The following table comprises a log of wild edible plants I have identified and some of the relevant information about each. Clicking on the name will take you to a blog entry describing the plant in greater detail and you can have an opportunity to leave comments. I would love for you to comment if you have any information that I or someone else may benefit from. Also, feel free to correct any mistakes I might make.

Wild Onions are fairly common and easy to identify. I found these in my parents’ yard. I fried these up with some tofu and tomatoes. It was good.

Tastes pretty good. A little bitter perhaps, but this specimem was young and fresh.

Spring Beauties have a small tuber that is apparently edible. I have yet to try them because I haven’t found enough in one place to harvest. I found this small patch in a field in the Chickamauga Battlefield.

Also known as Wild Carrot. It tastes a lot like carrot, really. It is a little tougher than a carrot. I ate these raw after cleaning. I had a hard time finding very large roots.

Spring 2001 Solomon’s Seal Polygonatum biflorum

Boiled the tubers and served with butter and salt. Very spicy aftertaste, almost tobasco-like. Will try again in soup. Don’t confuse with False Solomon’s Seal.
